The Best Scrambled Eggs
I’ve been a devout fanboy of J. Kenji Lopez-Alt for years. He approaches cooking from a science based approach, not just exploring what tastes good but also out why it tastes good.
His latest masterpiece is on how to make the best scrambled eggs. The secret being multi-faceted but essentially coming down to three things:
A pan that isn’t too hot
A cornstarch slurry
Cubes of cold butter
I tried my hand at making these eggs this morning and can definitively say they were the best scrambled eggs I’ve ever made at home, and realistic to make even on a busy weekday morning.
If you don’t already have it, I highly recommend his book The Food Lab.

After working remote for nearly a year, I completely agree with this.
You vs Advertisements
Around the world, there are regulations for "influencers". Those regulations make sure that if someone is paid to endorse a product, they have to declare that payment to the people watching. But why does no-one on TV, or film, or anywhere else have to do that?
Spotify vs Every Employer
Spotify indirectly upping its competitive edge in the hiring talent wars with this announcement of their “work from anywhere” policy, ushered in by the last year of the pandemic. From Business Insider:
On Friday, Spotify announced its work-from-home program, which lets its 6,550 global employees choose how they want to work at the company — in an office, remotely, or at a coworking space that the company will pay a subscription for.
Employees have to commit to an option for one year at a time, and have their manager's approval. But other than that, all employees need is their laptop and internet access.
However, here’s the kicker:
Spotify will continue to pay at San-Francisco or New York salary rates, based on the type of job. This is in stark contrast to Facebook and Twitter, who have both said they will cut employee salaries for those who choose to relocate away from their offices in the expensive San Francisco Bay Area.
This not only changes the game for existing employees of Spotify, but now the talent pool across the country is at their disposal. Who wouldn’t want to live and work from a city with a much lower cost of living but make SF or NY salaries?
While I don’t believe that all companies will shift to completely remote workforce, the last year of the pandemic has forced companies to rethink how they approach their workforce policy as it pertains to compensation and location. The next few years will be very interesting.
